I discovered Heather Bullard's Pumpkin Cookierecipe many years ago and have been making it ever since. It's one of those simple recipes using a few ingredients most of which you find in the store cupboard and perfect for using up all that pumpkin leftover from your carvings.
These delicious cookies are more of a soft cake texture I find and the perfect Autumnal treat. Maybe you could knock up a batch tonight to gift trick or treaters tomorrow? I know that work appreciated the batch I took into work yesterday.
